Permian Basin Chapter – Yellow City Cellars – Bo Salling Winemaker Tasting

Texan through and through, Bo Salling was sure he was going to be the
next Willie Nelson when he grew up, with life long aspirations of
playing music since he could hold a guitar. It was in 1991 when he took
a job at a winery in Lubbock, Texas while attending Texas Tech
that he found his second calling in life. For the next 20 years (or so)
Salling would double fist a guitar in one hand and Chateauneuf-du-Pape
in the other, sharing time with a day job in the  wine industry and
moonlighting with a touring band across the lower 48. Eventually
Salling would cross paths once again with his mentor  and longtime
friend, winemaker Kim McPherson. McPherson’s family name is synonymous
with pioneering modern winemaking in Texas as we  know it. Realizing the
improved growing practices of grapes in the  Texas High Plains, along
with McPherson’s honest and traditional approach to winemaking, Salling
wanted to contribute to the uprise of Texas wines, and in doing so, his
first production was 100 cases of Provence-inspired dry rosé called Dead
Flowers. Working with the warm climate grape varietals that resemble
wines of southern France and Spain, Salling wanted to change the
perception of Texas wines, all while using only 100% Texas High Plains
grapes. Years later Dead Flowers has grown to be a house hold name
throughout Texas as well appearing in some of the finest restaurants and
wine programs in the country. Bo is also a part of Earth Vine Sky
Cellars, a collaboration with Kim McPherson, next-gen winemaker Spencer
Igo, and some of the areas best growers, to produce wines that showcase
the regions accomplishments.”  Dead Flowers Rose’ also made Texas
Monthly’s wine of the month in their July 2015 issue.

We will be tasting his Roussanne, Dead Flowers Rose’,
Carignan, Mourvedre and Petite Sirah.  The event starts at 7:00 p.m. and
the cost will be $35 Members and $40 Guests.  Please RSVP by replying by
